Peach Pound Cake

  • 1 cup butter, softened
  • 2 cups sugar
  • 6 eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sour cream
  • 2 cups diced fresh peaches peeled and diced (I always add a little extra)
  • Confectioners sugar for dusting
Directions

In a large bowl, cream, butter, and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Beat in extracts.
Combine the flour, baking soda, and salt, add to the batter alternately with sour cream, beating after each addition. Fold in the peaches.
Pour into a greased and floured 10-in. fluted pan. Bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from the pan to a wire rack to cool completely.
Dust with confectioners’ sugar.

Peach Salsa

Peach Salsa

  • 3 ripe peaches peeled and diced
  • 1 plum tomato, seeded and chopped

  • ½ jalapeno, seeds removed and chopped

  • ½ small purple onion, chopped

  • ¼ cup cilantro chopped

  • 1 lime, juiced

  • Salt and pepper for taste

  • Garnish with cilantro

Directions
  1. Cut peaches into some cubes and put all other ingredients in a food processor for a rough chop. Don’t puree.
  2. Mix the peaches by hand with the salsa mixture.
  3. Serve chilled with tortilla chips or use on pork or chicken.

Our Personal Favourite

You have to try grilling our peaches right on your BBQ .
Take ripe peaches, halved and pitted. In a small bowl mix a little melted butter with cinnamon or brown sugar and brush on the peaches. Grill until golden brown and enjoy!
